Chocolate Chip Cookies

Always a hit with the Junior Jam Tarts and they make the house smell delicious. Swap the choc chips for other ingredients such as crystallized ginger, glace cherries or anything you fancy really. This is in American cups so *effects American accent badly* is super easy to make. I have a less sweet tooth so often use almond instead of vanilla essence.



Ingredients
150g softened butter
Half a cup of caster sugar
Half a cup of brown sugar
1 teaspoon of vanilla extract
1 egg
1 3/4 cups of plain flour
1 cup of chocolate bits
Makes about 24

Method
Soften the butter and put it into the mixing bowl. Add all of the other ingredients apart from the chocolate. Combine either by hand or using the mixer until everything is blended. Add the choc chips and mix through until evenly ish distributed. You may need to use your hands to bring the crumb like mixture together to form a ball.

How you cut out the cookies is up to you is up to you use a cutter, glass or roll them. I make a sausage / cylinder of dough, cut it into 6 pieces roughly the same size, then cut each into 4. Take each piece and roll it into a ball.

So, two choices here, pop the cookie ball on the tray either use a fork to flatten giving a nice pattern or simply squash the ball slightly. Two photos underneath to demo the outcome - I need new tray liners I know!
