Slow Cooker Goulash

We are trying to make more weekend meals that allow us to be flexible. By that I mean 'run around doing all the things you need to get done and have fun and arrive home starving and have something healthy, filling and ready to eat'. This is where the slow cooker comes into its own - especially since I bought a timer to use with it. Its pretty versatile - we love this with broccoli or salad, rice or couscous or pasta.

Slow Cooker Goulash
Ingredients
1.25 kg cubes casserole beef (I use a bit more  - 3 x 400g packets as that's what the supermarkets sells)
2 large or 3 smaller onions, diced
3 tablespoons of smoked paprika
1 teaspoon of salt
1 teaspoon ground black pepper
1 tin of chopped tomatoes
2 tablespoons tomato puree
Olive oil to brown the beef in
Method
1. Fry the diced onion until soft and golden brown then pop into the slow cooker

2. Put the smoked paprika, salt and pepper in a bowl. Toss 1/3 of the cubed beef in the bowl until coated and then fry in a pan until browned and add to the slow cooker. You only need a small amount of oil
Important tip - Use a good glug of hot water to clean the pan between each batch of beef - then put the water in the slow cooker. This stops the paprika burning between batches
3. Do this for the other two thirds of the beef


4. Add the tin of tomatoes and tomato puree to the slow cooker
Before cooking

Cook on High for 4 to 5 hours (or on Low for 6 to 9 hours).
