Chocolate Muffins

These are fast and use oil which means running out of butter (or not having it soft) is not an issue and they are very nice indeed. Great as a quick batch for a bake sale.


Ingredients
250g self-raising flour
1 tsp vanilla extract
175g caster sugar
1 large egg
250ml milk
2 tsp baking powder
90ml vegetable oil
2 tbsp cocoa powder
150g chocolate chips plus more for sprinkling - I usually chop us whatever chocolate I have in the cupboard. Great for using up chocolate from Easter or Christmas that isn't great quality.

Method
1. Preheat the oven to 180C and fill a 12 bun muffin tray with paper cases
2. Weigh out the dry ingredients into a large bowl and give them a quick mix. Pour all the liquid ingredients into another large jug or bowl and give them a brief mix as well
3. Mix both bowls together – Don't over mix. You can expect a lumpy but runny batter. Spoon into the muffin cases - they will be about 3/4 full
4. Sprinkle more chocolate chips on top and then cook for 20 mins or until risen and springy.
