Ingredients
250g self-raising flour
1 tsp vanilla extract
175g caster sugar
1 large egg
250ml milk
2 tsp baking powder
90ml vegetable oil
2 tbsp cocoa powder
150g chocolate chips plus more for sprinkling - I usually chop us whatever chocolate I have in the cupboard. Great for using up chocolate from Easter or Christmas that isn't great quality.
Method
1. Preheat the oven to 180C and fill a 12 bun muffin
tray with paper cases
2. Weigh out the dry ingredients into a large bowl and give them a quick mix. Pour all
the liquid ingredients into another large jug or bowl and give them a brief mix as well
3. Mix both bowls together – Don't over mix. You can expect a lumpy
but runny batter. Spoon into the muffin cases - they will be about 3/4 full
