A colleague at work mentioned this to me when I was bemoaning the 'ornament' my slow cooker had turned out to be. No more is it purely ornamental, turns out all I needed was a slow cooker buddy for inspiration. This was my first success and now I'm regularly doing it once a week to provide healthy chicken for salads, pasta, wraps & work lunches.
The thing with slow cooker chicken is it can look a bit pale and unappetizing. To counteract this a good sprinkling of herbs, pepper or paprika is added all over the top. Sounds minor but makes a big difference to appearance and taste.
Ingredients
1 medium chicken - it must fit inside your slow cooker
1 large onion
1 quartered orange, lemon or peeled onion (to put inside, just choose your option)
1 vegetable or chicken stock cube
Herbs and pepper
Method
Roughly chop the onion and place in the bottom of the slow cooker. This keeps the chicken off the bottom of the bowl and produces a great stock at the end. Place the chicken on top (having already popped your quartered orange, lemon or onion inside the cavity). Sprinkle a generous amount of seasoning on the top of the chicken. Mix the stock cube with a mug of hot water and pour in - don't wash off your seasoning! Cook on high for three hours. Lift out using a couple of large utensils - the chicken will be falling apart. Enjoy.
