Grandad Breadman has long made a great 'lash up' (English for chuck lots in a dish and make something fast, filling and delicious).
This is my take on his* version. Its a great way of getting veggies into the kids, and can pretty much be made from the store cupboard and freezer. This will feed me and the Junior Gingerbreads. Add more of any of the ingredients to bulk it up.
Ingredients
Pretty much any firm veg can be used
One 'sheaf' of egg noodles
One onion
One chicken breast**
One instant soup mix (cup), mushroom or chicken - without croutons. Half a tin of soup can be used instead.
3 tomatoes
6 broccoli florets, chopped into small 'trees'.
Diced red pepper
Method
Chop the chicken and cook in a pan with a glug of olive oil.
Add the chopped onion and red pepper, cooking on a lower heat until just soft. Whilst this is going on cook the broccoli in the microwave. Add to the pan. Chop the tomatoes.
Mix the instant soup in a mug and add to the pan. Mix in the tomatoes.
Cook the 4 minute noodles in a pan of hot water (as per their instructions). Do not overcook. Drain well and add to the pan and stir. Serve and eat immediately.
*Tin of cream of chicken soup, broccoli, tin of sweetcorn and chicken breast with the noodles.
**can be substituted for turkey or prawns or even precooked slices sausages - you get the idea
